We have a limited number of purebred grass-fed Wagyu beef quarters for sale in Colorado that we finished on field peas and alfalfa hay. This was done because field pea finished beef has been shown by North Dakota State University1 to provide the most preferred flavor of any finishing diet for cattle. Sensory panel analysis indicates an increase in tenderness, juiciness, and taste when field pea grain is included in cattle diets2. Field peas are a legume—not a grain like corn, oats, or barley.
This beef should not have the same fatty acid profile as grain-fed beef and be nutritionally similar to one hundred percent grass-fed Wagyu beef. This finishing diet—combined with the superior beef quality of purebred Wagyu cattle—provides an amazing quality for any beef lover.
The net weight of the quarters is around 100 lbs. Around 25% are a variety of steaks (rib steak, filet, sirloin, round, sirloin bavette, flank) cut 1" thick in vacuum-sealed packages. Around 35% are a variety roasts (chucks and round) weighing 3-4 pounds each, and about 40% is burger packaged in 1 pound vacuum sealed package. With our Wagyu beef for sale, there are also Dino ribs, brisket, liver, and misc. other cuts.
A quarter of beef requires about 4 cubic feet. You will need about one cubic foot of freezer space for every 35 – 40 pounds of packaged meat.
